Savoury vegan baklava
This is fusion cooking at its finest a sweet turned into savoury and vegan friendly

1 packet of filo pastry

5 sweet potato peeled and sliced

4 onions sliced

sesame seeds
Add a about 50ml of olive oil in a medium pan, on a medium heat, then add the onions and a good pinch of salt and cook them stirring every 2 or 3 mins until they cook down and go golden and caramelised, this will probably take about 20 mins. Drizzle the sweet potato with olive oil and roast in the oven @180 for 2o mins until cooked through, then mix them together with the onions and let them cool
To build it take the filo and unroll it, with a pastry brush and some olive in in a small bowl brush half a sheet of filo and then fold it back on its self, then brush that folded sheet with oil, repeat this with another sheet and the stick it on top of the brushed half sheet, repeat one more time and you have your first layer 3 folded halves of filo stuck together, put this into a rectangle dish that is similar size to the filo, place the onion and sweet potato mix on top then build another 3 layers sheet of filo, place this on top of the mix and then top with the rest of the mixture, make one final filo layer and place that on the top, brush the top with oil and sprinkle with sesame seeds, this is the secret part, now with a sharp knife cut through the pie before you bake it, what ever shape squares or diamonds thats up to you, bake @180 for 25 to 30 mins until golden brown, enjoy😃
