
Grilled vegetable, roast chickpeas and balsamic glaze
Colourful, delicious, super easy!!!
1 Eggplant
1 red,1 green,1 yellow capsicum
2 zucchini
1 tin of chickpeas
balsamic glaze (you can buy it anywhere now)
2 cloves of garlic
3 sprigs of each rosemary and thyme
good quality extra virgin olive oil
Cut the veg into lage and different shapes, gently coat with olive oil, season with salt and pepper, grill on a very high heat either on a griddle pan or on the bbq, about 2 to 3 mins each side getting a nice colour on both sides, rinse the chickpeas and dry roast them with some seasoning for about 10 to 15 mins @180 until crunchy, in a baking tray put 100ml of olive oil and 2 smashed glove of garlic along with the rosemary and thyme, put into a hot oven for 3 to 5 mins to infuse the oil, then add everything together, drizzle the balsamic glaze just before eating​
