Grilled vegetable, roast chickpeas and balsamic glaze

Colourful, delicious, super easy!!!

  • 1 Eggplant 

  • 1 red,1  green,1  yellow capsicum

  • zucchini 

  • 1 tin of chickpeas

  • balsamic glaze (you can buy it anywhere now)

  • 2 cloves of garlic

  • 3 sprigs of each rosemary and thyme 

  • good quality extra virgin olive oil 

Cut the veg into lage and different shapes, gently coat with olive oil, season with salt and pepper, grill on a very high heat either on a griddle pan or on the bbq, about 2 to 3 mins each side getting a nice colour on both sides, rinse the chickpeas and dry roast them with some seasoning for about 10 to 15 mins @180 until crunchy, in a baking tray put 100ml of olive oil and 2 smashed glove of garlic along with the rosemary and thyme, put into a hot oven for 3 to 5 mins to infuse the oil, then add everything together, drizzle the balsamic glaze just before eating
