lemon, chilli, chicken spaghetti 

I used to make this one for my sister while i was living in Ireland  and it became a favourite of mine, super simple and great after the gym or a work out, this recipes will feed 4 people

  • 320g spaghetti 

  • 400g chicken breast cut into thin strips 

  • 2 red chillies finely diced 

  • 2 lemons the zest of 

  • 1 bunch of parsley chopped 

  • 1 large onion finely diced 

  • 50ml olive oil and extra for cooking 

  • salt and pepper 

In a large sauce pan filled water add in about 1 tablespoon of salt per litre of water and bring to the boil​.  Place a frying pan on a medium heat add a small drizzle of olive oil, season the chicken and fry it off until golden brown and cooked through set a side.  When the water is boiling add the spaghetti and cook as per the packet instructions.  In the same pan as you used for the the chicken add a little more olive oil, then add the onion with a pinch of salt and cook gently for about 5 to 8 minutes until soft, add the chilli cook for another minute.  Drain the pasta in a colander keeping about 100ml of the cooking water, put the pasta back into the large pan add the chicken the onion and chilli the lemon zest and parsley along with the saved cooking water and put back on the heat and stir gently for one minute, finally add the olive oil, season with lots of black pepper and serve with grated parmesan.
