Cajun salmon and mango salsa

Mango's are crazy right now an awesome time to take advantage.  i don't really like them as a fruit they taste great just the are slimy and get stuck in my teeth, but pared with a spice of cajun its insane

salsa 

  • 1 ripe mango for 2 people 

  • 1/2 red onion

  • 1 lime 

  • 1 red chilli 

  • handful of fresh mint

  • olive oil​

Dice the red onion as small as you can, add a pinch of salt and the juice and zest of the lime over it, then dice the mango and chilli, chop the mint and mix it all with a little olive oil, don't forget to add salt and cracked pepper.  you can buy cajun spice anywhere these days so dust the salmon generously with the cajun heat a pan and fry the salmon in olive oil on both sides it should almost appear black then transfer to the oven @180 cook for 6 to 8 minutes for a perfect pink salmon, rest for 3 mins before serving, pour the salsa over the top, serve with green beans and roast sweet potato for a full macro hit
